Chef Hervé Roger Michel Chabert, Head Pastry Instructor and Head of Operations at Le Cordon Bleu, has passed away unexpectedly on November 5th, 2018. He is survived by his children, Florian and Cassandra Chabert; his sister; his parents, and his nieces and nephew.
Chef Chabert was born in Villefranche-sur-Saône on October 30th, 1965. His passion for pastry started at Maison Perdrix. Shortly after, he received his CAP in Patisserie, Confiserie, Glacerie, and Chocolaterie. He then worked at Pâtisserie Lafay, where he began to excel his talents and he met Christine, the mother of his children. Soon after, he developed an interest in teaching at Institut Paul Bocuse.
In 2001, Chef Chabert moved to Canada and started working at Le Cordon Bleu Ottawa to fulfil his drive and passion. During this time, Chef Chabert coached students for gold at the Skills Canada Competition.
Over the course of his career, Chef Chabert has inspired many students. Every day, he would wake up long before sunrise, ready to teach, around the world.
Outside of work, Chef Chabert kept up with the Ottawa Senators as well as the Olympique Lyonnais soccer team. Equally, he enjoyed travelling around the world and exploring various cultures. For fun, he liked to critique the food from other restaurants.
Chef Chabert was well-respected and beloved by many. He will truly be missed. For those wishing to pay their respects may do so at the Garden Chapel of Tubman Funeral Homes (3440 Richmond Rd) on Wednesday, November 14 th from 18:00 to 20:00. A memorial celebrating the life of Chef Chabert will be held at Le Cordon Bleu on Sunday, November 25th from 13:30 to 16:00.
